this is a surprising, impressive and delicious appetizer that may just supply "enough" turkey to feel you have met your holiday obligation, without putting everyone into a soporific stupour
Ingredients

| 1⁄4 | lb | ground veal |
| 1 | small onion, chopped | |
| 2 | T | dried cranberries, chopped |
| 1 | t | nutmeg |
| 1 | t | cinnamon |
| 2 | t | chives, chopped |
Notes
i am not generally a fan of serving rolling appetizers as a meal, but this hearty little snack is a nice alternative to having to cook an enormous bird and having to deal with leftovers in many forms for days (although i have some great leftover ideas, too!)
Instructions
sauté onions until brown and mix with nutmeg, cinnamon, chives and cranberries. cool. mix with veal, and put aside. smash a turkey cutlet between two pieces of plastic wrap with a roller until it is about a 6"x10" rectangle (rolling won't work, and you may not get a perfect rectangle. you can always add a turkey bit or just make a shorter roll). the turkey will be really thin (1/4" or less). put the veal mixture all along a long end and roll it up (don't forget to take off the plastic wrap). wrap up the roll tightly in aluminum foil and refrigerate for 1/2 hour or so. put in a 350 degree oven for 30 mins. cool slightly, unwrap and slice into medallions. serve hot. (this whole process takes about an hour).
