turkey broth

Description

from uncooked bones (but you can do the same with leftovers)

Ingredients

1 turkey carcass
 ozleftover veggies

Notes

this may just replace chicken as your favourite comfort soup.

Instructions

 

this is so easy.  if you don't have leftovers, take the uncooked bones and bake them in the oven at 350 degrees for at least half an hour.  this gives you that rich flavour.  put in a pot and cover with water and boil for at least an hour.  throw in any leftover vegetables or turkey bits, season with salt and pepper and throw on some parsley before serving.  whatever you throw in the soup, it tastes better if you sauté or bake it before... potatoes will thicken it up a bit. carrots and celery and onions are the old stand-bys, but use your imagination.  except don't use asparagus! (a vegetable i love, but not for stock!)
