corn and bean salad

refreshing, easy, colourful, crunchy
i love this salad.  it is fresh, beautiful, and the texture is great.  did i mention it's easy and delicious?  it's a great side dish, and also makes a nice salsa for fish.

Ingredients

1cnsweet niblet corn
1cnblack beans (you can use kidney or other)
1bncilantro (chopped or torn)
1 red pepper (chopped)
  flax seed oil (a few glugs)
  toasted seasoned vinegar (a few glugs)
  lemon juice (a few squeezes)

Notes

the dressing is what makes this special!  and it's so easy.

Instructions

 

throw in a bowl a can of niblet corn, a can of black beans, a chopped red pepper, and some chopped cilantro (you can use parsley or basil of you are not a fan of chinese parsley).  the idea is to have the elements cut to the same approximate size.

 

dressing: put half and half flax seed oil and toasted japanese seasoned vinegar and a splash of lemon juice in a container.  shake.  pour on as much as your taste to the salad and mix.
