this is really tasty, impressive and not as much work as you think... if you have a drill...
Ingredients
| 24 | shrimp | |
| 1⁄2 | c | flour |
| 2 | t | cayenne or paprika |
| 1 | T | (garlic) salt |
| ds | pepper | |
| 2 | eggs | |
| 1 1⁄2 | c | sweetened shredded coconut |
Notes
i served it up on christmas eve and it was a big hit. best when served hot so wait til everyone arrives. it only takes 2 minutes to actually cook.
Instructions
get a piece of wood and drill 24 holes in it, big enough to fit your skewers.
preheat oil to 350degrees. (i don't have a high heat thermometer, so i just wait until it starts to get those runny lines through it... ). line a baking sheet with paper towels.
thread shrimp on skewers
assembly line: 1. combine flour, (garlic) salt, cayenne, pepper in one plate 2. beat eggs lightly in a shallow bowl 3. shredded coconut on a third plate.
dredge shrimp through flour, coat with egg and roll through coconut.
fry shrimp until golden brown (about 1 minute). you have to do this in batches, depending on how big your frying situation is. drain on paper towels.
stick them in the wood and serve!
